After so many failed attempts you may not even want to try again but here are some tips to help you overcome some of the most common cake baking mistakes.</p>
<p>If your cakes tend to have a course texture, it is likely one of two problems. One common problem is adding too much baking soda in the mix. The other is too little liquid in the mix. A less likely option is that the sugar and butter wasn&#8217;t mixed well enough to create a smooth batter. Another thing that can lead to a coarsely textured cake is having the temperature too low in your oven. Not all ovens are 350 degrees when you set the dial on 350 degrees. Some ovens run hotter or cooler than the thermostat reads. You can use a heat resistant thermometer to see if your ovens&#8217; setting matches the actual temperature of the oven.</p>
<p>If you tend to bake cakes that seem to be difficult to break away from the pan, there are a few reasons for this. It may be something as simple as the pan requiring more oil and flour. Not removing the cake from the pan at the right time can also cause this issue. If you try to remove it too soon it may be too hot to loosen from the pan, but, on the other hand if it stays in the pan until it&#8217;s completely cooled it can cause the same problem. <p>The following tips may not all be useful to home bakers, simply because everyone uses different techniques. However, there is sure to be something here that will provide a quick fix to a baking problem.</p>
<p>* Have trouble rolling out butter-based piecrust? Try this: Roll out from the center lightly, and then cover the crust with a large piece of plastic wrap. Keeping rolling crust out until it reaches the edges of the plastic and then flip it over. Now the crust is on top of the wrap. Put another larger piece of plastic wrap on top and continue rolling until the crust reaches desired thickness. Then refrigerate if needed. This method helps the crust hold its shape, relieves that annoying tendency to split and helps prevent adding too much flour when rolling.</p>
<p>* Need a pie immediately for unexpected visitors or that school bake sale a child forgot to mention? Give up your pride and keep some pie-crust mix on hand. Substitute a few tablespoons of sour cream for some of the water called for in the mix recipe. The sour cream adds flavor and makes the crust flakier, so no one will ever know you used a packaged mix.</p>
<p>* Want a glossy finish on your pie? Brush it with some beaten egg whites.</p>
<p>* Don&#8217;t ditch that leftover pie-crust! Top it with Gruyere or Parmesan cheese, bake it and slice it into small slivers. Guests will rave about your succulent appetizer.</p>
<p>* Instead of flour, use a little bit of cake mix instead. The mix will bake right into the batter so there won&#8217;t be add white powder on the sides of the cake.</p>
<p>* If the layers of a cake stick, return them to a warm oven for a few minutes and they&#8217;ll come out easily. Another option is to line the bottom of the baking pans with some waxed paper (NOT plastic wrap!).</p>
<p>* Dip a spoon first in milk, and cookie dough will drop easily onto the baking sheet.</p>
<p>* A damp towel underneath the breadboard will keep it steady while the baker kneads bread dough. Also, be sure to place dough away from drafts when it&#8217;s rising. Otherwise, the drafts will make the dough rise too slowly and unevenly.</p>
<p>* Spray the dough hook of your electric mixer with vegetable cooking spray, and the dough won&#8217;t stick.</p>
<p>* Always work with fresh ingredients. For example, to test baking powder, place on teaspoon in one-third cup of water. Toss it out if it doesn&#8217;t fizz, because that&#8217;s a sure sign the baking powder is too old to work properly.</p>

Just like painters and sculptors, the best chefs know that you need good tools to bring out the best in you. And in the kitchen, the predominant tool that needs the utmost attention is quality cookware.</p>
<p>Given that getting to expert levels as far as cooking goes requires a lot of trial and error, but investing on the right cookware early on will at least minimize the error part.</p>
<p>The best sauces are almost always made on cooper cookware. The metal has a unique property that allows it to react quickly to changes in temperature. So if you turn down the heat, the pan will not stay hot and burn delicate sauces like bechamel. Copper also distributes heat more evenly than other materials. The downside to copper is that it will react with acidic foods so the best copper cookware are actually lined with stainless steel to counteract this. The only downside is that they tend to be on the pricey side.</p>
<p>Copper is also good for sauteing. Another candidate for this is anodized aluminum. Both distribute heat well and respond quickly to changes in temperature. As sauteing requires intense heat, both will do quite well. Another good type of cookware for sauteing is stainless steel with an aluminum or copper core. You will get toughness along with heat conductivity. Avoid non-stick cookware because the non-stick surface is a bad heat conductor and will produce inconsistent results.</p>
<p>The traditional Chinese wok is still the best cookware for stir frying. Coming as two types: the flat bottomed one, and the more popular round-bottomed one. Flat bottoms are more suited for electric ranges while the round bottoms are designed for gas stoves. Woks need to conduct heat well because stir-frying is done on the highest stove setting. Carbon steel, cast iron, and now aluminum are the most popular choices for woks.</p>
<p>Roasting pans are indispensable oven companions. The requirement here is even dispersal of heat, so the best candidates again are copper and aluminum. Pure copper roasting pans are the most popular, followed closely by anodized aluminum, and stainless steel lined with copper or aluminum. In addition to this, you can opt to use a roasting rack. Many prefer to leave the roast inside the pan so that the fat will give it intense flavor. Also, they want to keep the dripping for making gravy later. Others prefer to raise it up in a rack so that the fat drips away and makes the dish a little healthier.</p>
<p>Whether you want to concentrate on one or all cooking techniques, it would be wise to just get the best cookware you can afford instead of trying out cheap pots and pans then upgrading if you can&#8217;t get the desired results.<br />
<br />This way, you only pay once. After all, quality cookware will last you years and years, so it will come out cheaper in the long run.</p>

While you may be familiar with some of the top tips presented below, others may be new to you and go a long way towards making life in the kitchen a little easier and enhancing your wonderful culinary creations.</p>
<p>From tips on how to keep food items fresh for as long as possible to &#8220;kitchen witches&#8221; that prevent pots from boiling over, to how to best store potatoes, apples and onions, the advice below is all tried and tested by some of the best cooks in the world.</p>
<p>* Rather than throw out milk that is past its expiration date, add a tiny pinch of salt to it. The salt reduces the rate of bacterial growth and the milk will keep longer before it sours. This is a great tip for budget conscious cooks.</p>
<p>* To prevent brown sugar from hardening and clumping, store it in your freezer. If your brown sugar has already hardened into clumps, put some in a measuring cup and heat in the microwave for a few seconds (don&#8217;t heat too long or it will burn). A few seconds in the microwave warms up the molasses in brown sugar, causing the sugar to soften.</p>
<p>* By freezing wild rice, you can keep it for between three and four months; you can only keep it in the refrigerator for about a week.</p>
<p>* To save leftover canned of tomato paste, use one of these two tricks: Put some tomato paste on a piece of waxed paper and cover with second piece of waxed paper, then freeze. After the paste is frozen, peel off the waxed paper and transfer the tomato paste to a plastic freezer bag. The second trick is to freeze leftover tomato paste in ice trays. The next time you need to cook with tomato paste, you can defreeze the amount you need, without opening a new can.</p>
<p>* To avoid drying grilled meat, turn it over with tongs. Do not use a fork because the holes it makes in the meat will let the juices escape during the grilling and the meat will be tough and dry.</p>
<p>* If you use plastic containers to store sauces made with tomato (spaghetti sauce, chili sauce &#8230;), spray the insides of the containers with vegetable cooking spray first. This will keep them from getting stained by the tomato.</p>
<p>* A tiny amount of vegetable cooking spray, cooking oil or margarine will help to remove honey from a spoon when you are measuring it. Just coat the spoon lightly before you use dip it into the honey.</p>
<p>* A great tip to clean burnt food off a skillet or pan is to put water and a drop of dishwashing liquid into the pan and boil on the stove. This will loosen the burnt food and you&#8217;ll be able to get it off easily.</p>
<p>* Cleaning the grill before you start cooking on it is imperative, because not only are dirty grills unappetizing, but also bacteria grow on them and distort the flavor of the food you are grilling. To clean a grill, remove all burnt food remnants using a scraper and a grill brush, then rinse well. Before you use your clean grill, spray it with non-stick cooking spray. Food won&#8217;t stick as much to the grill, and cleaning it will be much easier.</p>
